How to make Salted Caramel Toffee Cookies

Start by creaming the softened butter and brown sugar together in a bowl. Then add the egg and the vanilla and mix all together.

Next, add the dry ingredients (flour, baking powder, baking soda, and salt). Add the caramel toffee pieces and mix well. Whatever is left of the caramel and toffee will be used for garnishing. YUM!

Using a cookie scoop, make the cookie dough balls.

Place the cookie dough balls on a cookie sheet to bake.

Once they are baked, you will want to take a mason jar lid or a cookie cutter to round out the edges of the cookies, making that perfect cookie shape! Then transfer the cookies to a cooling rack.

While the cookies are cooling, melt the remaining caramel to drizzle over the cookies.

Finish by sprinkling the remaining toffee and extra sea salt on top. Enjoy!

Salted Caramel Toffee Cookies Recipe

Yield: 18 cookies
Preparation time: 12 minutes
Bake time: 10 minutes
Additional time: 7 minutes

Ingredients:
1/2 cup unsalted butter, 1 stick (softened)
1 cup packed light brown sugar
1 egg
1 teaspoon pure vanilla extract
1 1/2 cups unbleached flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup caramel pieces (divided)
1/2 cup toffee pieces (divided)
Sea Salt (optional for tops of cookies)

Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Soften butter in the microwave for 20 seconds in a microwave safe bowl (do not melt).
Cream together butter and brown sugar.
Add egg and vanilla and mix well.
Stir in flour, baking powder, baking soda, and salt.
Add 1/4 cup caramel pieces and 1/4 cup toffee pieces (save the rest for garnishing).
Using a 2 tablespoon cookie scoop, create level scoops of cookie dough and place them on the prepared baking sheet (no need to roll in a ball).
Bake for 10-11 minutes or until the edges are golden brown.
Remove from the oven and immediately use a mason jar lid or cookie cutter to shape the cookies on the parchment paper.
Let cool for 5 minutes on the baking sheet before transferring to a cooling rack.
Heat 1/4 cup of caramel at a time and drizzle caramel over cookies and top with toffee pieces and sea salt (this can be done on the parchment paper or cooling rack).

Notes:
● Spray a microwave safe bowl with cooking spray before you melt the caramel so it doesn’t stick too bad.
● Work fast to drizzle caramel before it hardens or reheat the caramel in the microwave as needed in 10 second increments.
● Cookies are so good fresh, but even better the next day!
● Amount of cookies will depend on the size of the cookie dough balls.

Yes, you can make these cookies ahead of time and then freeze them before you bake them.

Create the cookie dough balls and place in a freezer bag or food saver and put in the freezer until you’re ready to bake.

Once you’re ready to bake, bake according to the directions and garnish!

Can I make these cookies without Toffee?

Yes! If you don’t have toffee, just make salted caramel cookies! You won’t have the crunch of the toffee, but the flavor will still be amazing!

Something about caramel and toffee just screams fall to me! I love the flavor of caramel apples and toffee candy!

I used Heath Bar Toffee Candy Pieces in this recipe, but you could always make your own, or just use something from the grocery store!
