These cookies are reminiscent of the classic 50/50 popsicles…you know the orange popsicles with the vanilla ice cream centers? To get the flavors of an ice cream into a cookie, I used the dry mix from a box of orange flavored gelatin and added white chocolate chips. I don’t want to say it was pure genius….but really it was. And so, so good.

To make these cookies you are going to need to buy a box of orange gelatin. We use the entire dry mix. Just the dry mix…we aren’t making actual Jell-O and then adding that to that cookie dough. That would be….weird.

TIP: I used orange extract in my cookies to give it even more orange flavor. If you don’t have orange extract, then just leave it out! Your cookies will still be amazing. If you have oranges on hand, then try adding a tablespoon of orange zest to the cookie dough. That will give you plenty of orange flavor without having to use the orange extract.

Rolling the cookies in sprinkles before baking is totally optional…but sprinkles are fun, so for me adding sprinkles is always a good idea!

Serves: 3 dozen Cooking Time: 10-11 minutes

Ingredients

  • 3/4 cup unsalted butter, room temperature
  • 1-1/2 cups granulated sugar
  • 1/4 cup powdered sugar
  • 1 (3-ounce) box gelatin- just the dry mix (I used orange flavored)
  • 3 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1-1/2 teaspoons orange extract or orange zest (optional)
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup white baking chips
  • TOPPING:
  • Sprinkles or granulated sugar

***COOKIE DOUGH NEEDS TO CHILL FOR 1-HOUR PRIOR TO BAKING***

In the bowl of your stand mixer, affixed with the paddle attachment, add the butter and beat on medium-high speed until smooth and creamy. Add the granulated sugar, powdered sugar and dry gelatin mix to the butter and mix on low until combined, then increase the mixer speed to medium until the mixture is light and fluffy. Add the eggs one at a time to the batter, mixing each egg in fully before adding the next egg. Add the vanilla extract and (optional) orange extract (or orange zest). Change the mixer speed to low and add the flour, baking powder and salt. Mix until just combined. Fold in the white baking chips.

Pour the cookie dough out onto a piece of plastic wrap, cover the dough and place in the refrigerator to chill for one hour.

Once dough has chilled, preheat the oven to 375-degrees and line three cookie sheets with parchment paper. Use a standard sized cookie scoop to scoop cookie dough balls. Roll the balls in a bowl of sprinkles or sugar and place on cookie sheet. Bake cookies, one cookie sheet at a time, for 10-11 minutes or until the center is set.

Notes

These cookies are even better the second day when the flavors have had a chance to marry! Store at room temperature in an airtight container.

TIP: This dough also freezes well. I have made these cookies before and baked off half of the dough and then tightly wrapped the rest of the cookie dough in plastic wrap and put it in a freezer ziplock bag and froze for several weeks. To defrost the cookie dough, just remove the cookie dough from the freezer and place in the refrigerator for 3-4 hours before scooping to bake.
